The tea room at Wensleydale’s historic Bolton Castle has been taken over by a chef who is following in his parents footsteps.
Guy Fairhurst spent much of his childhood in and around the castle estate, as his mother and father ran the renowned dining facilities there in the 1980s.
Guy qualified at York College in 2005 after inheriting his parent’s passion for food. After this he spent time in London working at the fashionable Eight Over Eight Thai restaurant in Fulham, before deciding to return to Yorkshire.
The licensed Tea Room is situated in the medieval castle’s impressive Guest Hall and serves a wide range of cakes, scones and other delicious treats, with a selection of teas, coffees, soft drinks, wines and local beers as well as hot lunches between midday and 3pm.
Bolton Castle general manager Katie Boggis said:
“It’s great having Guy running the catering operation as he is a first class chef. And what is even more pleasing is the fact his mother, Sue, is part of Guy’s team.
“The Fairhursts’ are very well known in Wensleydale, especially for their cakes. One of the areas we are looking to promote within the castle is our wedding packages, and with Guy coming on board this will make us an even more attractive venue.”
“London is all very good as a training ground and a place to learn the hospitality business inside out, but it’s a pleasure to be back at home in Yorkshire.
“Wensleydale really is God’s own country, and it’s fantastic that we have such wonderful ingredients for our dishes literally on our doorstep.
“Bolton Castle is very much in my veins and being able to run the catering operation is something I’ve wanted to do for a long time. The castle is renowned for being the ‘prison’ on Mary Queen of Scots.
“My aim is for it to become as equally well-known for its catering and hospitality operation.”
